Try Something New This Week with One of These Recipes

As someone who falls into the trap of making the same meals week after week, I need a little help in mixing things up. So now, I’m here to help you do the same thing with these five recipes! 

Here are five meals you might want to try over the next week.

BBQ pulled pork sandwiches. My mom is from the south, so to say that I’m a fan of bbq is an understatement. Start this meal by seasoning a pork shoulder with a dry rub made from ingredients like paprika, brown sugar, garlic powder, and cayenne pepper. Then, slow-cook the pork in the crockpot until it’s tender and can be easily shredded with a fork. While the pork is cooking, prepare your sauce, combining ketchup, brown sugar, vinegar, and spices. Once the pork is done, shred it and toss it in the sauce. Easy as that! You can serve your pulled pork on its own or slap it between some buns with some coleslaw on top. 

Lentil Soup. I am all about comfort meals, and soup is always a go-to for me. For a tried and true comforting meal, try making a hearty lentil soup. Lentils are super underrated, packed with protein and fiber, making them a filling choice. Combine lentils with diced vegetables like carrots, celery, and onions, and simmer them in a flavorful broth with herbs and spices. It’s a satisfying and wholesome option, especially for chilly evenings.

Savory Mushroom Risotto. If you’re feeling both fancy and like you want something comforting, I always recommend indulging in some risotto. Sauté sliced mushrooms with garlic and shallots, then stir them into Arborio rice as it cooks. Gradually add warm chicken or vegetable broth, allowing the rice to absorb the liquid and become tender. Finish with grated Parmesan cheese and fresh herbs for a restaurant-worthy dish that’s surprisingly easy to make

Quick and Easy Thai Red Curry. Curry is one of the staple recipes in my household. It’s easy and delicious, which is always a win in my book. Simply simmer your choice of protein (chicken, shrimp, tofu, or vegetables) in a fragrant red curry sauce made with coconut milk, red curry paste, and a touch of sugar and fish sauce. Serve it over jasmine rice and you’ve got a delicious dinner that will totally impress your friends.

Tasty Veggie Stir-Fry. Stir fry is such a fun and tasty go-to meal, especially if you’re in a hurry or don’t have the energy to spend a long time cooking. Chop an assortment of your favorite veggies, such as broccoli, bell peppers, snap peas, and carrots. Then sauté them in a hot wok or skillet with a stir-fry sauce made from soy sauce, ginger, garlic, and a hint of sesame oil. Serve over steamed rice or noodles for a satisfying meatless option. Or add some beef, pork, or chicken for extra protein.
